Sweetie French Toast

French toast or ""Pain Perdu" is a New Orleans Classic. The translation means literally "lost bread". It used to be that if French Bread was not used, after a few days it would become so stale it was considered "lost".

ingredients

4 1/2 inch thick slices of stale french bread

1 large egg

5 tablespoons unsalted butter

3 tablespoons Chef Paul Prudhomme's Sweetie Magic�

3/4 teaspoon vanilla extract

1 Cup evaporated milk

how to prepare

In a medium mixing bowl, add egg yolks, evaporated milk, vanilla and Sweetie Magic. Whisk until blended thoroughly. In a smaller bowl, whip egg whites until thick and frothy. Fold into egg/milk mixture. Dredge each slice of bread into batter. In medium skillet melt butter and cook each slice of bread until golden brown. Sprinkle with powdered sugar if desired or serve with preserves or warm syrup.
