Chile Pie Crust

from the kitchen of Chef Paul Prudhomme

Makes 1 pie

ingredients
4 tablespoons unsalted butter, softened
½ cup sugar
1 small egg
½ teaspoon Chef Paul Prudhomme's Ground Dried Chile - Anaheim (Mild)
½ teaspoon Chef Paul Prudhomme's Ground Dried Chile - New Mexico (Mild)
¼ teaspoon Chef Paul Prudhomme's Ground Dried Chile - Árbol (Hot)
¼ teaspoon ground cinnamon
½ teaspoon cream of tartar
1 teaspoon baking soda
½ teaspoon vanilla extract
¼ cup plain yogurt
1½ cups all purpose flour

Process all the ingredients in an electric mixer with a dough hook until just combined. Refrigerate until cold.
