Sloppy Joes

Makes 50, ½ cup portions

This is a School Nutrition bulk recipe.
1/3 cup vegetable oil
2½ cups chopped onions
1/3 cup Chef Paul Prudhomme's Meat Magic®
5 tablespoons chili powder
5 pounds beef crumbles, precooked
5 pounds redkidney beans, canned, drained
5 cups crushed tomatoes, drained
5 cups tomato sauce, canned
5 cups shredded cheddar cheese
how to prepare
Heat the oil in a tilt-skillet or large pot over high heat. Add the onions and cook, stirring frequently, for 2-3 minutes, until clear and translucent. Add Meat Magic® and chili powder and stir well for 2 minutes, then add the beef crumbles, kidney beans, crushed tomatoes and tomato sauce. Simmer, stirring occasionally, about 15 minutes. Stir in the cheese and let sit for a few minutes until cheese is melted.
