Sloppy Joes

from the kitchen of Chef Paul Prudhomme

Makes 8 Sloppy Joes

2 tablespoons vegetable oil
¾ cup chopped onion
¼ cup chopped celery
2 tablespoons Chef Paul Prudhomme's Magic Seasoning Salt®
1 tablespoon Chef Paul Prudhomme's Ground Dried Anaheim Magic Chili
1 pound lean ground beef
1 can (15 ounce) tomato sauce
½ cup ketchup
1 tablespoon dark brown sugar
1 teaspoon Worcestershire sauce
8 hamburger buns, split and toasted
how to prepare

Put a medium size pot over high heat. Add the oil, the onions and the celery. Stir the onions and celery for 1 minute. Add the Magic Seasoning Salt® and the Anaheim chile. Stir for 1 minute. Add the ground beef and stir, using the spoon to break up the meat. When the meat is broken up and the pink color is gone, add the tomato sauce, ketchup, brown sugar and Worcestershire Sauce. Stir well and bring to a boil. When the liquid is boiling on the edges, lower the heat to medium and simmer for 6 minutes. Turn off the heat.

Spoon about ½ cup of the Sloppy Joe mixture into each bun.
