Aburi Chicken Burgers

from the kitchen of Chef Paul Prudhomme

Serves 4

1 pound ground chicken
4 teaspoons water
1½ tablespoons Chef Paul Prudhomme's Poultry Magic®
2 tablespoons vegetable oil

Note:  This recipe also works well on grills equipped with mesh nets.

Combine the ground chicken, water and 2 teaspoons of the Poultry Magic® and fold in gently. Shape the mixture into 4 patties, about 4 ounces each. Season the patties evenly on both sides with the remaining Poultry Magic®.

Lightly oil the grill. Grill the patties, turning several times, until the patties are nicely browned on both sides and cooked through. (At least 160°F in the center. Use a meat thermometer to be sure they are fully cooked.)

Serve immediately with all your favorite hamburger fixings.

Note: If you prefer a less seasoned dish, simply cut back of the amount of Poultry Magic that you use.
