from the kitchen of Chef Paul Prudhomme

Makes 4-6 servings

5 tablespoons unsalted butter or margarine
3 teaspoons Chef Paul Prudhomme's Vegetable Magic® OR
Chef Paul Prudhomme's Magic Barbecue Seasoning OR
Chef Paul Prudhomme's Magic Seasoning Salt® OR
Chef Paul Prudhomme's Meat Magic®
1 cup thinly sliced zucchini*
1 cup thinly sliced yellow squash*
1 cup thinly sliced carrots*
1 cup broccoli flowerets*
1 cup sliced mushrooms*
1 cup chopped onion

*You can substitute any fresh vegetables for the ones listed above.

Melt butter or margarine in large skillet over high heat.  Add the Magic Seasoning Blend® and stir until well-blended.  Add onion and sauté until golden brown, about 5 minutes, stirring occasionally and scraping pan bottom well.  Add zucchini, yellow squash, broccoli, carrots, and mushrooms and cook until crisp-tender, about 3-4 minutes, stirring frequently and coating all vegetables with butter and seasonings.  Serve immediately.
